Soy protein comes from soybeans and offers multiple health benefits, some of which are just beginning to be discovered. This column reviews the health benefits of soy products with a special focus on women and children's health. Isolated Soy Protein, the most refined form of soy protein, it contains about 90 percent protein. The product is acknowledged for its excellent emulsifying properties and fine particles and mainly used in meat products to improve texture and eating quality.
3. Characteristics:
1)Good dispersancy, medium viscosity, good instant and soluble property and nondusty.
2)Good instant property, can be made into injection brine.
3)Improving texture and slice up capability of products.
4)Good hydrophilicity and dissolubility, can evenly distribute throughout the meat products.
4. Application:
1) Meat Products: Widely used in canned meat and ham, replace meat and cut the cost of products.
2) Beverage&Dairy products: Widely used in non-dairy beverages and various forms of milk products, it is used to replace milk powder.
3) Ice cream: Instead of skim milk powder for ice cream production.
4) Flour Products: Adding no more than 5% of the Soy protein isolate in the production of bread, can increase the bread's volume, improve its skin color. Adding 2-3% of the soy protein isolate to noodle products, can decrease the broken rates of noodles and make them taste good.
5. Storage:
Stores up under dry and the cool condition, the temperature is lower than 28 degrees centigrade, the relative humidity is not bigger than 65%, gets up the storage life from the production date is 12 months.
